The plate pinch trains pinch grip, which is thumb-against-fingers strength rather than the crushing grip a barbell trains. You hold one or two plates smooth side out between the pad of the thumb and the flat of the fingers, stand tall and hold until the grip fails. It is a static isolation movement for the forearms, and stacking several thin plates is harder to hold than one heavy plate of the same weight.
